Matcha Bliss Balls

Matcha is green tea leaves that have been ground to a very fine powder. it is rich in antioxidants and a great energy boost. It is also very versatile as you can drink it with almond milk or use it in your cooking. I decided to make bliss balls as they are an ideal healthy on the go snack. You can make batches and store them in the freezer.

Ingredients

1 cup of cashew nuts

1/2 cup of desiccated coconut

1 tablespoon of coconut oil

2 tablespoons of cashew butter

1 teaspoon of matcha powder

3-4 tablespoons of raw honey or maple syrup

Place all the ingredients in a food processor and blend till a sticky dough forms. Matcha powder is bitter so before you start rolling the mixture into bite sized balls taste it to see if you need to add some more sweetener. Personally I don not like it too sweet. Once you have rolled your balls you can roll them in some desiccated coconut and place them in the fridge to set. Once ready enjoy!
