Almond Pumpkin and Sunflower Seed Butter

I love all nut butters. They are absolutely delicious, packed full of healthy fats and vitamin E and you can put them everywhere. I put mine in my porridge, muesli and oat cakes.  I am also a firm believer in making everything yourself. I always make my own nut butters, that way I know exactly what goes into them. I decided to experiment and use pumpkin and sunflower seeds as I always eat them. This is really easy, all you need is a good food processor as the nuts can often take a while before they become creamy.

Ingredients

1 cup of almonds
1 cup of pumpkin and sunflower seeds

Optional

Pinch of himalayan salt
1 teaspoon of coconut oil

I like to roast my nuts and seeds but you can skip this process if you like. After I have roasted them, I allow them to cool down and then place them in my food processor and blend until lovely and smooth. This should take about fifteen minutes. This is when you need a good quality food processor to make this process easier, otherwise not only will you be waiting forever but you can actually break your appliance. You may have to occasionally stop to scrape the sides of the food processor so all the nuts and seeds get blended. Once the butter is ready place it in an air tight sterilised glass container. Enjoy.
