Summer Salad

In the warmer weather you tend to favour salads. This is one of my favourites and I wanted to share it with you.


Handful of spinach
Handful of rucola (rocket salad)
half a fennel sliced
I carrot grated
2 tablespoons of pomegranate seeds


Make sure you wash all your ingredients thoroughly especially if not organic. I wash all my fruit and vegetables with bicarbonate of soda. Build the salad in layers starting with the first ingredient on the list, finishing with the pomegranate seeds on top. You can use olive oil and apple cider vinegar as your dressing. You can have this salad with some oven baked fish, grilled chicken or tofu.
