I must say, I don’t eat many sweets as I don’t really have a sweet tooth, but when I do feel like indulging, this Pistachio and Goji Berry Chocolate Brittle is one of my favourite go-to desserts. I like the chocolate with the pistachio and walnuts; they give it that extra crunch. It is also very easy to prepare and healthy!

Recipes Ingredients

To make this delicious Pistachio and Goji Berry Chocolate Brittle, you’ll need the following ingredients:

  • 1/2 a cup of cacao butter
  • 2 tablespoons of coconut oil
  • 2-3 tablespoons of raw cacao powder
  • 3-4 tablespoons of raw honey or maple syrup

For the topping:

  • 1-2 tablespoons of crushed pistachio nuts
  • 1-2 tablespoons of crushed walnuts
  • 1-2 tablespoons of goji berries
  • 1 tablespoon of coconut shreds

Place the ingredients for the chocolate in a saucepan over a gentle heat, stirring until the mixture is smooth. Taste and adjust the mix to suit your desired level of sweetness and chocolatey flavour. Do not bring to the boil.

Pour the chocolate on a baking tray lined with parchment paper, spreading it out. Sprinkle the pistachios, walnuts, goji berries and coconut shreds on top and place in the freezer for a few hours. When you are ready to eat it, break it into pieces and enjoy!
