I have to say that I do not eat many sweets as I do not really have a sweet tooth, but when I do feel like indulging then this is one of my favourite desserts. I like the chocolate with the pistachio and walnuts, they give it that extra crunch. It is also very easy to prepare and healthy!
For the chocolate
1/2 a cup of cacao butter
2 tablespoons of coconut oil
2-3 tablespoons of raw cacao powder
3-4 tablespoons of raw honey or maple syrup
For the topping
1-2 tablespoons of crushed pistachio nuts
1-2 tablespoons of crushed walnuts
1-2 tablespoons of goji berries
1 tablespoons of coconut shreds
Place the ingredients for the chocolate in a saucepan on a gentle heat stirring until the mixture is smooth. Taste and adjust according to how sweet and chocolatey you like it. Do not bring to the boil. Pour the chocolate on a baking tray lined with parchment paper spreading it out. Sprinkle the pistachios, walnuts, goji berries and coconut shreds on top and place in the freezer for a few hours. When you are ready to eat it break it into pieces and enjoy!
