Christmas Caramel Chocolates

It is Christmas again – my favourite time of the year! I have made these healthy caramel filled Christmas chocolates. They are easy to make and delicious. Since it is the festive season you can use any chocolate you like. I used Green and Blacks Organic chocolate.

Ingredients

For the chocolate

200g Green & Blacks organic chocolate 70%

1 teaspoon of coconut oil

For the caramel

1 cup of dates

3 tablespoons of cashew butter

1/4 cup of water

1 teaspoon of coconut oil

1 teaspoon of vanilla essence

Start by melting the chocolate. Place a sauce pan with a little water on low to medium heat and place a bowl on top. Make sure the bowl is heat proof and it is not touching the water in the pan. Place your chocolate in the bowl and stir to melt.

Pour  the chocolate into the Xmas moulds. Fill them up only half way. I purchased my moulds at Amazon. Place in the freezer for and hour to set. In the mean time prepare the caramel by placing all the ingredients in a blender and blend until lovely and smooth. Don’t worry if you have made too much as you can use it for pancakes and porridges.

Take the moulds out of the freezer and place some caramel into each mould and cover with the remaining chocolate and place in the fridge for an hour. Once set enjoy!
