These are super quick and delicious. I always tend to favour savoury over sweet treats. These pancakes are high in protein and filling and most important very quick and easy to make. I am not a chef and my cooking skills are limited so I always look for quick recipes that do not require a lot of thinking. You can have these pancakes for breakfast, lunch or dinner.
Ingredients
2 tablespoons of chickpea flour
1 egg
100ml of water
1 tablespoon of olive oil
Himalayan salt and pepper
You can whisk all the ingredients or place them in the blender. Once the mixture is ready heat a pancake pan on medium heat greasing it with olive oil. Taking a ladleful of the mixture at a time place in the pan. You want to keep your pancakes thin. You can use pastry rings to make them smaller. If making them smaller use less of the mixture otherwise they will come out too thick. Cook for 2-3 minutes on each side or until cooked. Place the pancakes on plate lined with a paper towel to absorb the excess oil. You can serve with salad or grilled vegetables. Enjoy!
