Seafood Salad

This has got to be one of my all time favourites. You do not have to eat seafood just in the summer. I pretty much eat this salad all year round. I particularly enjoy it at Christmas time as a delicious starter. I had it twice this week and simply love it! You can use any fish you like. Most seafood salads will have a combination of octopus, shrimps, calamari and scallops. I am not a fan of scallops so I have omitted them. Whatever ingredients you use it will be delicious.

Ingredients:

4 cups of water

1 cup of clams with shell

1 cup of calamari cut into rings

1 cup of shrimps

1 cup of prawns

2 celery sticks

2 lemons

3 crushed garlic cloves

2-3 bay leaves

1 -2 table spoons of toasted sesame oil

A handful of watercress to garnish

For the dressing

1-2 tablespoons of olive oil

1 -2 garlic cloves  thinly cut

1 chilli pepper or chilli flakes

Juice of half a lemon

Himalayan salt and pepper

Start by getting a pot and place the water, bay leaves, crushed garlic cloves, toasted sesame oil, the juice of the 2 lemons and the lemons inside and boil. Once it has boiled put it to one side so all the flavours blend well together. In the meantime chop the celery finely, prepare the dressing ingredients and set aside. Go back to the broth and bring to the boil again and add the clams, cooking them for 3-4 minutes till they are all open. Take the clams out and set aside. Next place the calamari rings into the boiling broth, cook for 1-2 minutes till soft and set aside. Do the same with the prawns and shrimp. If you have decided to cook octopus it will require longer to cook. You are looking at roughly an hour.

Once all your seadfood is cooked  your can either keep the broth or discard it. Place all the seafood in a bowl and mix it with the dressing ingrdients and the celery. Taste and adjust the seasoning. Place in the fridge for a couple of hours  and serve with watercress. Enjoy!
