Baked Sweet Potato

Recipe this week is  a sweet jacket potato, a great comfort food and perfect for the cold weather. This recipe is really delicious and filling.


2 sweet potatoes

chili flakes or 1/2 a chilli

2 garlic cloves

A handful of  parsley finely chopped

125g of cherry tomatoes chopped in half

1 can of organic chickpeas

olive oil

Himalayan salt and pepper

Wash the sweet potatoes and to speed up cooking time either cut the potatoes in half or boil them for 10-15 minutes which is what I did. Once the sweet potatoes have cooled cover them with olive oil, salt and pepper. Place them on an oven tray in a preheated oven 170C and cook for 30 minutes or until tender.

While the sweet potatoes are in the oven heat a pan over medium heat with the olive oil with the garlic and chilli. Heat for 1 minute then add the cherry tomatoes, chickpea and 1/4 cup of water. Sauté for 5-7 minutes. In the last minute add the parsley.

Once the sweet potatoes are ready cut them in the middle and season with salt, pepper and olive oil. You can scoop out the flesh and place in the pan and sauté for another minute and  then place everything inside the sweet potato. Serve an enjoy!
