The recipe this week is stuffed avocado with lentils. I just love avocados and eat them all the time. They are rich in vitamin E which is good for your skin and heart and avocados are very filling. Lentils are a great source of protein.
Ingredients
1 avocado
1/2 a cup of cooked lentils
2 tablespoons of extra virgin olive oil
1 garlic clove finely chopped
1/4 of an onion finely chopped
small piece of ginger finely chopped
1/2 chilli finely chopped or chilli flakes
coriander
himalayan salt
Start by heating the olive oil, garlic, onion, ginger and chilli in a pan for a minute, I always add 2 tablespoons of water when I stir fry or saute’. After a minute add the lentils and cook for 5 minutes, add the coriander and set aside. Cut the avocado in half, remove the stone and stuff with the lentils. Enjoy!
